Breakfast is one of my favourite parts of the day, especially on weekends when I have a little bit more time to spend on making it. This weekend, I tried out a recipe for porridge oat pancakes that I found on one of my favourite sites for recipes: Pinchofnom.com. The recipe serves 2, but I halved it to make one portion. The ingredients list is simple: 40g porridge oats, 1 small pot of syn-free yogurt, 3 eggs, 2 tsp vanilla extract and then it’s just a matter of mixing all these all up and frying like normal pancakes.
When it came to this part, I took the opportunity to try out a new gadget I recently bought online. It’s called a Pancake and egg maker cake ring and according to the online ads, it’s a “non stick flippin’ fantastic fast & easy way” to make pancakes.
The idea is that you fill the circles with your pancake batter and then use the side handles to easily flip the whole thing. Now, I don’t know if my porridge pancake mix was to heavy for this thing, or if I just need more practice, but it was not “flipping’ fantastic”.
This mess (above) is the reality of how they looked while cooking. When it was time to flip mine, I lifted the silicone mould and the pancakes stayed put on the pan. (I also lost a couple at this point). However, they pancakes that survived kept their shape and I found their small size easy to control on the pan as I kept them cooking.
Fortunately, when it came to dishing them up, appearance was something I could jazz up with some berries and a dollop of my favourite yoghurt and it really was a delicious and super filling breakfast that I’m sure will be making a regular appearance in my kitchen.
