Blueberry baked oats

This is a breakfast favourite of mine. I discovered it as a Slimming World member, seeking a way to make my daily porridge oats more exciting.


The recipe is simple: 40g of porridge oats, 2 eggs, 1 tbsp of yoghurt and 2 tsps of vanilla essence. Mix all the ingredients together, add in a few blueberries to the dish (optional) and bake at 180°C for around 20 minutes, or until golden brown.

On the Slimming World plan, this breakfast is ‘syn-free’ when using the porridge as a Healthy B option. It’s really filling and satisfying and it makes the kitchen smell amazing first thing in the morning!
